120gr mixed berries

1 ¼ cups plain flour

1 ½ tsp baking powder

½ tsp baking soda

½ cup sugar

Pinch of salt

½ cup buttermilk

30gr melted butter

2 tbsp vegetable oil

1 egg

1 tsp vanilla
Directions
In a large bowl, combine all dry ingredients and mix well.
In a separate bowl, whisk together the wet ingredients until smooth.
Pour the wet mixture into the dry ingredients and gently stir until just combined.
Fold through the mixed berries, being careful not to overmix.
Spoon the batter into your Cherub Baby Freezer Tray, filling each spot about ¾ full.
Bake at 180°C (160°C fan-forced) for 18-20 minutes, or until a skewer inserted into the centre comes out clean.
Allow the muffins to cool completely before serving or freezing for later.
